These enemies come in two varieties: small, largely-defenseless shrooms and enormous brutes. The little ones can attack, but will almost always fall flat on their faces instead, leaving them completely vulnerable. The large mushroom men deal tremendous damage with their slow wind-up punches, and can guard crush the player quite easily.

Strategy
In The Great Hollow you may be able to use the mushroom pads above to set up plunging attacks on the big guys; elsewhere, just try to get behind them and attack once or twice before rolling backward. Otherwise, lure them into swinging at you, then rush in for no more than two quick hits (depending on your weapon) before dodging back again. Be wary of a one-two swing combination, which can easily kill you. Never attempt to fight the large ones in groups!
When returning to The Great Hollow from Ash Lake, aggro the Mushroom People into following you back through the Ash Lake tunnel. The tunnel narrows a short ways into it and the Large Mushroom People can't advance any further down the tunnel. Attack them at that spot, and be sure to avoid the one-two swing.
Also, if you follow the mushroom pads up quite a ways, I found the big guys were unable to advance past a certain pad with a branch crossing over it, like it was blocking the way. (Needs confirmation) Lantern005: I have encountered this, the branch is about 1/4 of the way down the mushroom path and crosses almost the entire mushroom pad. The large one cannot pass this branch, but they can punch past it.

I beat the dlc before encountering the large mushrooms. They just stood still, never attacking me (both in the Forest and the bottom of the Hollow). The small ones still attacked, so I’m not sure if it’s the result of a glitch or Elizabeth

Baby Mushroom is only worth 50 souls and is completely passive unless you hit them first. Its' really not worth hitting them at all. Also they're adorable.

Does anybody know why there’s a sound everytime you kill a baby mushroom?
- Anonymous
It was funny but made me feel a little bit cruel killing the baby ones. After hitting them they'd start running away and I'd have to chase them down and run them through with my halberd. The big ones though you got to be careful with, though they're fairly easy to beat. Using a longer weapon helps, I just would attack 2x then back pedal when the wind up animation started and wait for both punches till hitting again.

Is there any truth in the claim that while part of the Forest Hunter covenant, you will be considered a traitor or punished for harming them?

Not very much written here. Add a few more sentences atleast, there's so mushroom.

The mushroom people are based on the real life King Oyster Mushrooms. They're very peaceful, don't hit hard at all, and fried in butter they're excellent (insert ominous Dark Souls laughter)
