The Berenike Knight is an Enemy in Dark Souls.
The Berenike Knight Information
These great, hulking hollowed soldiers are heavily armoured and are equipped with a suitably large shield and weapon - either mace or greatsword. They can be found in three locations throughout Lordran: The first one is at the altar in the Undead Parish, the second is on the rooftops of Sen's Fortress and the third is found on the bridge leading to Crossbreed Priscilla in the Painted World of Ariamis.
Drops
- Tower Shield (rare drop)
- Large Titanite Shard (common drop from all except the one in Undead Parish; 100% drop from the one in the Painted World)
- Titanite Shard (guaranteed drop from the one in Undead Parish)
- Greataxe (rare drop)
- Greatsword (rare drop)
- Steel Armor Set items (very rare, with the Steel Helm the most common drop)
Attacks
- Over-head smash
- Horizontal Swing
- Shield Slam
- Estus heal, heals to full HP
Strategy
- Defeat other enemies in the area first to allow you fight them on their own.
- Lure them to an area large enough to allow you to get out of reach of their attacks, should you need to.
- Utilize flanking tactics as they do not move or turn very quickly and their most powerful attacks are forward facing.
- Time your attacks between their long attack and recovery animations.
- Block using a high stability shield while circling behind them to reduce the danger of their horizontal swings and combos.
- At least some of their attacks can be parried succesfully without taking any damage, even though there won't be any kind of riposte.
- The one in Sen's Fortress can be killed using arrows without him coming to attack you if you stand just before the stairs leading down to him.
Note: The Iron Knight in the Parish can potentially bug out and disappear if not killed when first confronted by the player. If you wish to obtain the Tower Shield, make sure not to aggro the Tower Knight unless you intend to defeat him then and there. (May Not Drop However)

TIP: These guys are extremely weak to fire, and even a standard fireball can take a decent chunk out of their health. If you abuse their slow animations and spam pyromancy spells they can be dealt with pretty easily.

And btw, everyone should know that the mace wielding Berenike Knights CAN BE PARRIED. Almost all of their attacks are delayed so you have to precise and patient with your parries, but once you get the parry timing right then these guys are really easy to kill. Even the first one you encounter in the Undead Chapel.
TIL in Dark Souls Remastered that they can drop the Greataxe. I got it with no soft humanity either. That was a lucky drop. Unfortunately i'm not doing a strength build so I won't be using it.

Tried farming the one in Sen''s for a bit to see what the drop chances for shard farming are like.
With 300 item discovery using the gold serpent ring he dropped 3 large shards on 5 kills and 6 large shards on 10 kills, which speaks to a 60% drop chance.
If we assume that item discovery is a flat multiplier of drop chances (i.e. 100 = 100%, 200 = 200%, etc) then the base drop chance for large shards is around 20%, meaning with max item discovery you can push it up to 80% for farming.

I have 85 poise and they can poise break me so easy and its hard to poise break them whats this dark souls 3?

Not always safe to counter them straight after block/dodge heavy attack, they can combo to counter your counter unlike other big slow enemies. Learned this the hard way in NG+.

So whats the deal with these guys? Do they have any interesting lore?

These guys wield the greatsword (an ultra) the same way we wield a straight sword but they still only manage to do decent damage at best. I guess they had to be fair but imagine the damage they should be doing to the player, damn.

Might just be me, but it feels like the one in the painted world is fast as **** compared to the other two.

I spent half an hour trying to bow and arrow this guy at low level. He has so much Estus and the arrows can't stop him from drinking. Don't do that.

I was going to make a greatsword build and managed to get a drop from the knight. Saved me the trouble of buying one or getting to Anor Londo for it.

These guys become somewhat trivial by the time you hit Sen's Funhouse to be fair...
I once got the mace as a dropped item, it was a regular small mace though
