The people of Carim are a devout people,with many serving the gods that once resided in Anor Londo and other places in Lordran. The people of Carim are much like those of Throlund, but they are more inclined towards darkness. The Knights of Carim seem to be somewhat sinister. The tragic Knight Lautrec the Embraced is a Carim knight.
