Vitality is a Stat in Dark Souls. Vitality is a stat that modifies player's maximum Health points in Dark Souls.
Vitality Information
Vitality governs the player's maximum Health points.
- From 40 vitality onwards increasing this stat becomes less useful. The amount of health points gained decreases from around 20 at 41 vitality to around 8 at 51 vitality.
- Health can be further influenced by items. See Health page for further information.

Not sure why they changed it to vigour in later games, vitality sounds way better

Not to nitpick but "From 40 vitality onwards increasing this stat becomes less useful" should be 41, since you get the same gain going to 41 as 40.

Here's my idea for a new strat. Sorcerer class to start with lowest Vit possible. Cursed to have 265 points of health at a maximum. Red tear stone ring, and then a choice of any ring to compliment the situation (Hornet, Leo, Bellowing Dragoncrest Rings). And lastly and most importantly, equip sanctus for 2 points of regen per 2 seconds. It's not enough to keep you alive no matter what, but casting power within once would bring you to RTS range for sure, and then when casting power within at the start of any battle from full health you would be able to get in some good damage for a time.
Reply to this with suggestions related to this and/or criticisms. It may be completely stupid, but basically I don't want to use the Dusk Crown Ring and that's about it.

Well that's fun 2,633 HP if you have Mother, Ring of Flavor, and Tiny

Sooo let's talk about HP. How much do you need and where to stop?
Soft cap is at 30 Vitality. At this point you have 1100 HP without any health boosting items. If you wear Ring of Favor and Protection giving total of 1320. Mask of the Mother will give you 1210. Both of them 1452. This is actually nice pool of health.
Hard cap is not 40 but 50 and gives you 1500 HP (1800 with FaP ring, 1650 with Mask, 1980 both). So there is significant difference but at big cost since it will require spending 20 SL more on HP points. (Giant Dad build use 48 Vit and FaP ring giving totally 1768 hp)
With 99 Vit and FaP ring you get 2280 HP. With Mask of the Mother you will end with 2090 HP and with both 2580 HP. But if you add Tiny Being's Ring you will jump to 2633 HP. Those ammouts are more than heath bar could actually display.
Let's put this together (Tiny Being's Ring is too useless to consider wasting ring slot so I'll skip it - only FaP and Mother comparission):
Soft Cap: 30 Vit - 1100 naked, 1210 mask, 1320 ring, 1452 both
Hard Cap: 50 Vit - 1500 naked, 1650 mask, 1800 ring, 1980 both
Max: 99 Vit - 1900 naked, 2090 mask, 2280 ring, 2508 both
Medium damage dealt by weapons at their peak is around 500. Of course stronger and slower weapons and weapon buffs will allow you get more but on the other side there are protections form armor and stats lowering damage. So if you care about your total Soul Level and you are quite good at rolling do not go beyond 30 Vit and you should be good.
On the other hand If you don't care about SL going to high and online play Vitality is one of the two stats actually worth getting up to 99 (second one is Endurance).
